    Prepare the Cheese

    Slice the Kasseri cheese into 1/2 inch thick pieces. Dredge the cheese slices in all-purpose flour, shaking off any excess flour.

    Heat the Oil

    In a large skillet, heat the olive oil over medium-high heat until shimmering.

    Fry the Cheese

    Add the floured cheese slices to the hot oil and fry until golden brown, about 2-3 minutes per side. Carefully remove them from the skillet and drain on paper towels.

    Prepare the Salsa Verde

    In a bowl, combine pumpkin seeds, minced garlic, fresh dill, lemon juice, salt, and pepper. Mix well to create a salsa verde.

    Flambé the Cheese

    Place the fried cheese back into the skillet, pour over a small amount of ouzo or brandy, and carefully ignite with a long lighter. Allow the flames to subside.

    Serve

    Transfer the flaming cheese to a serving plate, drizzle with the dill salsa verde, and serve with warmed pita bread.
