    Roast the Eggplant

    Preheat your oven to 400°F (200°C). Pierce the eggplants with a fork and place them on a baking sheet. Roast for 30-40 minutes or until the eggplants are soft and the skin is charred. Remove from the oven and let cool.

    Prepare the Roasted Tomatoes

    If you're using fresh tomatoes, halve them and roast them in the oven with olive oil, salt, and pepper until caramelized (about 20-25 minutes). If using canned or pre-roasted tomatoes, simply set aside.

    Make the Baba Ganoush

    Once the eggplants are cool enough to handle, scoop the flesh into a food processor. Add tahini, pomegranate molasses, roasted tomatoes, garlic, olive oil, salt, and black pepper. Blend until smooth and creamy.

    Prepare the Garlic Yogurt

    In a bowl, mix yogurt with minced garlic, a pinch of salt, and a drizzle of olive oil. Stir well and set aside.

    Serve

    Transfer the baba ganoush to a serving dish. Top with garlic yogurt, chopped pickled chili, and dill. Drizzle with olive oil and serve with pita bread or vegetable sticks.
