Falafel Preparation

    Soak Chickpeas

    Soak the dried chickpeas in water overnight or for at least 8 hours. Drain and rinse before use.

    Make the Falafel Mixture

    In a food processor, combine the soaked chickpeas, garlic, onion, parsley, cumin, coriander, baking powder, salt, and black pepper. Process until the mixture is coarsely blended but holds together when pressed.

    Shape the Falafel

    Form the mixture into small balls or patties, about 1.5 inches in diameter.

    Fry the Falafel

    Heat oil in a deep frying pan over medium-high heat. Fry the falafel in batches until golden brown and crispy, about 3-4 minutes per side. Remove and drain on paper towels.

    Serve

    Serve the falafel hot with tzatziki, pickled chili, and sumac onion as accompaniments.
