Baking the Pie

Bake the pie
Bake the pie in the preheated oven for 15 minutes, then remove and let cool to room temperature.
Meringue Preparation

Make the meringue
In a large mixing bowl, beat egg whites and cream of tartar until soft peaks form. Gradually add sugar while continuing to beat until stiff peaks form.
Finishing the Pie

Top with meringue
Spread the meringue on top of the cooled pie, sealing the edges to prevent shrinking. Use a spatula to create peaks.

Final baking
Bake the pie for an additional 10 minutes, or until the meringue is golden brown. Remove from oven and let cool.
Pomegranate Coulis

Prepare the coulis
In a small saucepan, combine pomegranate juice and sugar. Heat over medium heat until the sugar dissolves. In a separate bowl, mix cornstarch with water to form a slurry, then add to the saucepan. Stir continuously until the mixture thickens. Remove from heat and let cool.

Slice the key lime pie and drizzle with pomegranate coulis before serving.
