Crust Preparation

    Make the crust

    Preheat the oven to 350°F (175°C). In a bowl, combine graham cracker crumbs, sugar, and melted butter. Mix well until crumbly. Press the mixture into the bottom and up the sides of a 9-inch pie pan. Bake for 8-10 minutes until set and lightly golden. Remove from oven and let cool.

Filling Preparation

    Prepare the filling

    In a separate bowl, whisk together egg yolks and sweetened condensed milk until smooth. Add key lime juice and lime zest, and mix until well combined. Pour the filling into the cooled crust.

Baking the Pie

    Bake the pie in the preheated oven for 15 minutes, then remove and let cool to room temperature.

Meringue Preparation

    Make the meringue

    In a large mixing bowl, beat egg whites and cream of tartar until soft peaks form. Gradually add sugar while continuing to beat until stiff peaks form.

Finishing the Pie

    Top with meringue

    Spread the meringue on top of the cooled pie, sealing the edges to prevent shrinking. Use a spatula to create peaks.

    Bake the pie for an additional 10 minutes, or until the meringue is golden brown. Remove from oven and let cool.

Pomegranate Coulis

    Prepare the coulis

    In a small saucepan, combine pomegranate juice and sugar. Heat over medium heat until the sugar dissolves. In a separate bowl, mix cornstarch with water to form a slurry, then add to the saucepan. Stir continuously until the mixture thickens. Remove from heat and let cool.
