Preparation

Cook Black Rice

In a saucepan, combine black rice and water. Bring to a boil, then reduce heat to low, cover, and simmer for about 30-35 minutes until the rice is tender and the water is absorbed. Fluff with a fork and set aside.

Make Pineapple Salsa

In a bowl, mix together diced pineapple, red onion, cilantro, and lime juice. Set aside to let the flavors combine.

Prepare Soy-Ginger Reduction

In a small saucepan, combine soy sauce, grated ginger, and honey. Bring to a simmer over medium heat and reduce for about 10 minutes until thickened. Set aside.

Prepare Ahi Tuna

Season the ahi tuna steaks with salt and pepper on both sides. In a shallow dish, combine panko breadcrumbs, sesame seeds, and everything bagel seasoning. Dredge the tuna steaks in the mixture, pressing gently to adhere.

Cooking

Sear Ahi Tuna

Heat a skillet over medium-high heat and add a little oil. Once hot, sear the crusted tuna steaks for 1-2 minutes on each side for medium-rare, or to your desired doneness.

Plating

Serve

On a plate, serve a portion of black rice topped with the seared ahi tuna. Drizzle with soy-ginger reduction, and top with pineapple salsa. Garnish with wasabi and pickled ginger.
