Prepare the Filling

Mix the Filling
In a mixing bowl, combine ground chicken, green onions, garlic, ginger, soy sauce, and sesame oil. Mix well until all ingredients are incorporated.
Assemble the Pot Stickers

Fill the Wrappers
Take a wonton wrapper and place 1 tablespoon of the chicken filling in the center. Moisten the edges with water, fold the wrapper over to form a half-moon shape, and seal the edges. Repeat with the remaining wrappers and filling.

Pan-Fry the Pot Stickers
In a large skillet, heat vegetable oil over medium heat. Add the pot stickers and cook for about 3-4 minutes until the bottoms are golden brown. Add 1/4 cup of water to the pan, cover, and steam for an additional 5 minutes.
Prepare the Soy-Ginger Glaze

Mix the Glaze
In a small saucepan, combine soy sauce, honey, ginger, rice vinegar, and sesame oil. Heat over medium heat until the mixture is slightly thickened, about 3-5 minutes.
Prepare the Rice Noodles

Cook the Noodles
In a pot, bring water to a boil. Add rice noodles and cook according to package instructions, typically about 4-6 minutes. Drain and set aside.
Prepare the Peanut Dressing

Mix the Dressing
In a bowl, whisk together peanut butter, soy sauce, lime juice, water, honey, and chili flakes until smooth. Adjust consistency with more water if necessary.
Serve

Plate the Dish
Serve the pot stickers on a bed of rice noodles, drizzled with soy-ginger glaze and peanut dressing. Garnish with chopped peanuts and fresh cilantro.
