Make the cheesecake filling
In a large bowl, beat cream cheese and sugar until smooth. Add vanilla extract, amaretto, and sour cream, mixing well. Add eggs one at a time, mixing just until combined. Pour the filling into the cooled crust.

Bake the cheesecake
Bake in the preheated oven for 55-60 minutes, until the center is set but slightly jiggly. Turn off the oven and let the cheesecake cool inside for 1 hour. Remove from oven and refrigerate for at least 4 hours or overnight.

Prepare the bruleed bananas
Slice bananas in half lengthwise. In a skillet, melt butter over medium heat. Add the bananas cut side down and sprinkle with brown sugar. Cook until caramelized, about 3-4 minutes. Flip and cook the other side for another minute.
Spiced Almond Brittle

Make the almond brittle
In a saucepan, combine sugar and water over medium heat. Stir until sugar is dissolved. Bring to a boil without stirring. Once it reaches a golden color, add sliced almonds, cinnamon, and a pinch of salt. Pour onto a parchment-lined baking sheet and let cool completely before breaking into pieces.
