    Prepare the Marinade

    In a large bowl, combine the pineapple juice, chipotle peppers, cumin, oregano, minced garlic, salt, black pepper, and lime juice. Mix well until all the ingredients are blended.

    Marinate the Pork

    Cut the pork shoulder into small cubes and add them to the marinade. Ensure all pieces are well coated. Cover the bowl with plastic wrap and refrigerate for at least 4 hours, preferably overnight for best flavor.

Cooking and Assembling Tacos

    Cook the Pork

    Preheat your grill or stovetop grill pan over medium-high heat. Remove the marinated pork from the fridge, letting excess marinade drip off. Grill the pork for about 8-10 minutes, turning occasionally, until the meat is cooked through and has a nice char.

    Prepare the Tacos

    While the pork is cooking, warm the corn tortillas on a separate skillet or directly on the grill until pliable. Remove from heat and keep warm.

    Assemble the Tacos

    Once the pork is cooked, remove it from the grill and let it rest for a few minutes. Chop into small pieces. To assemble, place a generous portion of the grilled pork on each tortilla. Top with diced pineapple, onion, and chopped cilantro.

    Serve the tacos immediately with lime wedges on the side for squeezing over the top.
