Preparation of Fish

Cut the Fish

Start by cutting the fresh white fish into small, bite-sized cubes (about 1/2 inch).

Marinate the Fish

Place the cubed fish in a glass or ceramic bowl and pour the lime and lemon juice over it. Ensure the fish is fully submerged in the juices. Cover the bowl and refrigerate for at least 30 minutes to allow the fish to 'cook' in the citrus.

Chop the Vegetables

While the fish is marinating, finely chop the red onion, tomato, and jalapeño (if using). Roughly chop the cilantro leaves, discarding the stems.

Combine Fish and Vegetables

After the fish has marinated for at least 30 minutes, drain a bit of the excess citrus juice if desired. Add the chopped onion, tomato, jalapeño, and cilantro to the fish. Mix gently to combine.

Season the Ceviche

Add salt and black pepper to taste, mixing well to ensure even seasoning.

Serve

Plate and Serve

Serve the ceviche chilled in small bowls or on a plate. Garnish with additional cilantro, if desired. Enjoy immediately with tortilla chips or on its own.
