Meat and Marinade

Method

Marinating the Pork

  1. 1

    Prepare the Marinade

In a large bowl, combine pineapple juice, chipotle peppers, minced garlic, cumin, oregano, salt, black pepper, and lime juice. Mix well to create a marinade.

  2. 2

    Marinate the Pork

Place the pork shoulder in a large resealable plastic bag or dish. Pour the marinade over the pork, ensuring it is well coated. Seal the bag or cover the dish, and refrigerate for at least 4 hours, or preferably overnight.

Cooking the Pork

  1. 3

    Prepare the Grill

Preheat a grill or stovetop grill pan over medium-high heat.

  2. 4

    Cook the Pork

Remove the pork from the marinade, allowing excess to drip off. Grill the pork for about 20-25 minutes, turning occasionally, until the internal temperature reaches 75°C (165°F) and the exterior is caramelized.

  3. 5

    Rest and Slice

Remove the pork from the grill and let it rest for 10 minutes. Slice it thinly against the grain.

Assembling the Tacos

  1. 6

    Warm the Tortillas

While the pork is resting, warm the corn tortillas on the grill or in a skillet for about 30 seconds on each side until pliable.

  2. 7

    Assemble the Tacos

Place a few slices of grilled pork onto each tortilla. Top with diced pineapple, chopped cilantro, and finely chopped onion. Serve with lime wedges on the side.
