Prepare the Fish
Rinse the fish fillets under cold water and pat dry with paper towels.

Fry the Fish
In a large skillet, heat the vegetable oil over medium-high heat. Once hot, carefully add the breaded fish fillets. Fry for 3-4 minutes on each side or until golden brown and crispy. Remove and place on paper towels to drain excess oil.

Prepare the Slaw
In a large bowl, combine the shredded cabbage and shredded carrot.

Dress the Slaw
Add lime juice, salt, and chopped cilantro to the cabbage mixture. Toss to combine well. Set aside to let the flavors meld.
Salsa

Dress the Salsa
Add lime juice and salt to the tomato mixture. Stir until well combined. Let sit for a few minutes for the flavors to develop.

Warm the Tortillas
Heat the corn tortillas in a dry skillet over medium heat for about 30 seconds on each side until warm and pliable.

Assemble the Tacos
Place a piece of crispy fish on each tortilla, top with cabbage slaw, and finish with a generous spoonful of salsa.

Serve the tacos immediately, garnished with extra cilantro if desired.
