    Prepare the Tortillas

    Cut each corn tortilla into 6 wedges to create chip shapes.

    Heat the Oil

    In a large frying pan, heat the vegetable oil over medium-high heat until it shimmers.

    Fry the Chips

    Add the tortilla wedges in batches, making sure not to overcrowd the pan. Fry for about 2-3 minutes on each side or until golden brown and crispy.

    Drain and Season

    Remove the chips from the oil and drain on paper towels. While still hot, sprinkle with salt to taste.

Salsa

    Chop the Vegetables

    Dice the tomatoes and onion finely. Mince the jalapeño (remove seeds for less heat if desired) and chop the cilantro.

    Mix Ingredients

    In a medium bowl, combine the diced tomatoes, onion, cilantro, and minced jalapeño.

    Add Lime Juice and Season

    Squeeze the juice of one lime over the mixture and add salt. Stir well to combine.

    Let it Rest

    Let the salsa sit for at least 15 minutes to allow the flavors to meld together before serving.
