    Prepare the Cake Batter

    Preheat the oven to 350°F (175°C). In a large bowl, whisk together flour, sugar, cocoa powder, baking powder, baking soda, and salt. In another bowl, mix eggs, buttermilk, vegetable oil, red food coloring, and vanilla extract until well combined. Pour the wet ingredients into the dry ingredients and mix until smooth.

    Bake the Cake

    Pour the cake batter into greased ramekins or a cake pan. Bake for about 20-25 minutes, or until the edges are firm but the center is still slightly soft.

    Make the Cream Cheese Gelato

    In a mixing bowl, combine cream cheese and heavy cream. Whisk until smooth. Freeze in an ice cream maker according to the manufacturer’s instructions until it reaches a gelato consistency.

    In a bowl, beat mascarpone cheese until smooth. Add a little sugar and vanilla extract, if desired, and whip until fluffy.

    In a microwave-safe bowl, melt the single origin dark chocolate in 30-second intervals, stirring until smooth.

    Once the cakes are cooled slightly, serve them warm topped with cream cheese gelato, a dollop of whipped mascarpone, melted dark chocolate, and a sprinkle of cookie crumbs for chocolate dirt.
