Method

Prepare the Fruit Cobbler

Preheat the Oven

Preheat your wood-fired oven to about 375°F (190°C).

Prepare the Fruit

Wash and chop the seasonal local fruit into bite-size pieces. Place them in a large bowl and mix with 1/4 cup of sugar and cinnamon. Set aside.

Make the Batter

In another bowl, combine the flour, baking powder, salt, and remaining sugar. In a separate small bowl, whisk together the melted butter and milk. Pour the wet ingredients into the dry ingredients and stir until just combined.

Assemble the Cobbler

Spread the fruit mixture evenly in a greased baking dish. Pour the batter over the top of the fruit, spreading it evenly.

Bake

Place the baking dish in the wood-fired oven and bake for about 30-35 minutes, or until the top is golden brown and the fruit is bubbling.

Prepare the White Chocolate Caramel

Make the Caramel

In a saucepan over medium heat, combine the sugar and water. Stir until the sugar dissolves, then let it boil without stirring until it turns a light amber color.

Add Butter and Cream

Remove from heat and carefully whisk in the butter and heavy cream until smooth.

Add White Chocolate

Add the white chocolate chips and stir until melted and combined. Set aside.

Prepare the Lemon Sorbet

Make the Sorbet Base

In a saucepan, combine the water and sugar. Heat until the sugar dissolves completely.

Add Lemon Juice

Remove from heat and stir in the fresh lemon juice. Let it cool.

Chill and Freeze

Pour the mixture into a shallow dish and freeze for about 4-6 hours, scraping with a fork every hour until fluffy.
