Prepare the Pizza Dough
Preheat your wood oven to 500°F (260°C). Roll out the pizza dough on a floured surface to your desired thickness.
Assemble the Pizza
Spread the fennel pollen barbecue sauce evenly over the rolled-out dough, leaving a small border around the edges.
Add Toppings
Layer the shredded mozzarella cheese, smoked pork, thinly sliced red onion, and Mama Lil's peppers on top of the barbecue sauce.
Bake the Pizza
Drizzle a little olive oil over the top, then carefully transfer the pizza to the preheated wood oven. Bake for about 8-10 minutes, or until the crust is golden and the cheese is bubbly.
Garnish and Serve
Remove the pizza from the oven, let it cool for a minute, then garnish with fresh basil. Slice and serve immediately.
