Method
Prepare the Pork Tenderloin
Marinate the Pork
In a bowl, combine sweet tea, brown sugar, soy sauce, minced garlic, and black pepper. Add the pork tenderloin and marinate for at least 1 hour, preferably overnight.
Cook the Pork
Preheat the oven to 400°F (200°C). Remove the pork from the marinade and place it in a roasting pan. Roast for 25-30 minutes, or until the internal temperature reaches 145°F (63°C). Let rest before slicing.
Prepare the Bacon Fat Braised Butter Beans
Add Beans
Add butter beans and chicken broth to the skillet. Season with salt and black pepper. Simmer for 10-15 minutes until heated through.
Prepare the Blackberry Barbecue Sauce
Cook the Sauce
In a saucepan, combine blackberries, ketchup, apple cider vinegar, brown sugar, Worcestershire sauce, and black pepper. Simmer for 15-20 minutes until thickened.
Prepare the Sweet Pepper Jam
Make the Jam
In a pot, combine diced sweet bell peppers, sugar, and apple cider vinegar. Cook on medium heat until peppers are soft. Stir in pectin and boil for 1 minute. Pour into sterilized jars.
