Pickle the Carrots
In a saucepan, combine white vinegar, water, sugar, and salt. Bring to a boil, stirring until sugar and salt dissolve. Remove from heat and add the julienned carrots. Let cool, then transfer to a jar and refrigerate for at least 1 hour before serving.
