In a small bowl, combine pickled onions, chopped jalapeño, lime juice, and a pinch of salt. Mix well and set aside.

In a large mixing bowl, whisk together the flour, cornstarch, garlic powder, paprika, salt, and black pepper. Gradually add water to form a smooth batter.

Coat the Cauliflower
Dip each cauliflower floret into the batter, ensuring they are fully coated.

Fry the Cauliflower
In a deep pan, heat the vegetable oil over medium-high heat. Once hot, carefully add the coated cauliflower florets in batches, frying until golden brown and crispy, about 5-7 minutes. Remove and drain on paper towels.

Plate the spicy fried cauliflower, drizzle with the jalapeño-lime vinaigrette, and sprinkle with crumbled goat cheese. Serve immediately.
