    Braised Short Ribs

    2. In the same pot, add onion, garlic, carrots, and celery. Sauté until softened. Return the short ribs to the pot with the bay leaves and pour in the beef broth. Bring to a simmer, cover, and transfer to the oven. Braise for 3 hours or until tender.

    Elote Corn Salad

    3. While the ribs are braising, grill the corn until charred. Let cool, then cut the kernels off the cob. In a bowl, combine corn, mayonnaise, chipotle peppers, and cilantro. Season with salt and pepper.

    Pickled Onions

    4. In a bowl, combine vinegar and sliced red onion. Let sit for at least 30 minutes.

    Poached Eggs

    5. Bring a pot of water to a gentle simmer. Crack each egg into a small bowl, then gently slide into the water. Cook for 3-4 minutes until whites are set but yolks are runny. Remove with a slotted spoon.

    Assembly

    6. Toast the English muffins. On each muffin half, layer shredded short ribs, elote corn salad, a poached egg, and top with pickled onion.
