    Prepare the Short Ribs

    Season the short ribs with cumin, chili powder, garlic powder, salt, and black pepper. Heat olive oil in a large skillet over medium-high heat and sear the ribs on all sides until browned. Transfer to a slow cooker.

    Cook the Ribs

    Add a splash of water or beef broth to the slow cooker, cover, and cook on low for 6-8 hours until the meat is tender and easily pulled apart.

    Prepare the Fries

    While the ribs are cooking, wash and cut the russet potatoes into fries. Rinse them in cold water and dry thoroughly. Heat oil in a deep fryer or large pot and fry the potatoes until golden brown and crispy. Drain on paper towels and season with salt.
