    In a bowl, whisk together blue cornmeal, all-purpose flour, baking powder, and salt. In another bowl, mix milk, eggs, and tequila. Combine wet and dry ingredients, stirring until just mixed. Preheat a waffle iron and pour batter into it. Cook until golden brown. Keep warm.

    In a bowl, combine buttermilk and hot sauce. Add chicken thighs, ensuring they are well-coated. Cover and marinate in the refrigerator for at least 1 hour, or overnight.

    Heat vegetable oil in a deep skillet over medium-high heat. Remove chicken from buttermilk marinade, allowing excess to drip off. Fry chicken pieces until golden brown and cooked through, about 5-7 minutes per side. Drain on paper towels.

    In a bowl, mix diced watermelon, lime juice, and chopped cilantro. Toss well to combine.

    Take a waffle, add a piece of fried chicken, and top with avocado butter, watermelon salsa, and a drizzle of tamarind-habanero syrup. Fold the waffle like a taco and serve immediately.
