    Prepare the Chips

    Cut the corn tortillas into triangles. Heat the vegetable oil in a large pot over medium heat. Once hot, fry the tortilla pieces in batches until golden brown and crispy, about 2-3 minutes per batch. Remove with a slotted spoon and place on paper towels to drain excess oil. While still hot, sprinkle with salt and set aside.

    Prepare the Jalapeños

    Slice the jalapeños into thin rounds. You can remove the seeds for less heat, if desired. Set aside.

    Make the Guacamole

    In a bowl, mash the ripe avocados with a fork until smooth. Stir in the minced onion, fresh cilantro, lime juice, and salt. Mix until combined and adjust seasoning to taste.

    Serve

    Serve the fresh jalapeño chips with your guacamole on the side, garnished with sliced jalapeños, if desired.
