    Prepare Duck Confit

    In a large pot, submerge duck legs in duck fat and season with salt and pepper. Cook slowly over low heat for about 2-3 hours or until the meat is tender and falling off the bone. Remove the duck, shred the meat, and set aside.

    Assemble Taquitos

    In a skillet, heat corn tortillas until soft. Place a generous amount of shredded duck onto each tortilla, roll them tightly, and secure with a toothpick if necessary.

    Fry Taquitos

    In a deep frying pan, heat vegetable oil over medium heat. Add the rolled taquitos and fry until golden brown and crispy, about 3-4 minutes per side. Remove and drain on paper towels.

    Serve taquitos warm with mole poblano, tomatillo salsa, shredded cabbage, and crumbled cheddar cheese on the side.
