    Prepare the Ingredients

    Start by preheating your grill or broiler to high heat. Chop the red onion and jalapeño pepper, and peel the garlic cloves. Set aside.

    Char the Vegetables

    Place the Roma tomatoes, red onion, jalapeño, and garlic on the grill or under the broiler. Grill until the tomatoes are charred and softened, about 8-10 minutes, turning occasionally for even charring.

    Blend the Salsa

    Remove the charred vegetables and allow to cool slightly. In a blender or food processor, combine the charred tomatoes, red onion, jalapeño, garlic, fresh cilantro, lime juice, olive oil, salt, and black pepper. Blend until desired consistency is reached (smooth or chunky).

    Transfer the salsa to a serving bowl. Taste and adjust seasoning if necessary. Serve with tortilla chips or as a topping for your favorite dishes.
