    Cook the Bacon

    In a skillet over medium heat, cook the bacon until crispy. Remove from skillet and drain on paper towels. Chop into small pieces.

    Scramble the Eggs

    In the same skillet, remove excess bacon grease leaving about 1 tablespoon. Whisk the eggs with salt and pepper, then pour into the skillet. Cook over medium heat, stirring occasionally until scrambled and fully cooked.

    Combine Filling

    In a mixing bowl, combine the chopped bacon, scrambled eggs, and cheddar cheese. Mix well and set aside.

    Prepare Empanadas

    Preheat the oven to 400°F (200°C). Roll out empanada dough on a floured surface and cut into circles. Place a spoonful of the filling in the center of each circle.

    Seal and Bake

    Fold the dough over the filling to create a half-moon shape. Seal the edges with a fork. Place on a baking sheet and bake for 20-25 minutes or until golden brown.
