    Prepare the Albondigas

    In a large bowl, combine the ground beef, cooked rice, egg, minced garlic, chopped onion, cilantro, salt, and pepper. Mix well until all ingredients are fully incorporated.

    Shape the Meatballs

    Form the mixture into small meatballs, about 1 inch in diameter.

    Cook the Meatballs

    In a large skillet, heat olive oil over medium heat. Add the meatballs to the skillet and cook for about 10-12 minutes, turning occasionally until browned and cooked through.

    Assemble the Quesadillas

    On a large tortilla, sprinkle a portion of the pepper jack cheese, add a layer of cooked meatballs, and top with additional cheese. Place another tortilla on top.

    In the same skillet, cook the assembled quesadilla over medium heat for about 4-5 minutes on each side, until the tortillas are golden brown and the cheese is melted.
