Prepare the Cheesecake Mousse
In a mixing bowl, beat the cream cheese until smooth. Gradually add the heavy whipping cream, powdered sugar, and vanilla extract, mixing until fluffy and well combined.

Prepare the Strawberries
Wash and slice the fresh strawberries. If desired, sprinkle a little sugar over them to enhance their sweetness and let them sit for 10 minutes.

Assemble the Tacos
Take a taco shell and fill it with a generous amount of cheesecake mousse. Top it with sliced strawberries and sprinkle graham cracker crumble on top.
