Branzino

Method

Preparation

  1. 1

    Prepare the Branzino

Clean the branzino fish, making sure to remove any scales and innards. Rinse them under cold water and pat dry with paper towels.

  2. 2

    Marinate the Fish

In a bowl, mix olive oil, lemon juice, minced garlic, chopped parsley, salt, and black pepper. Rub this mixture all over the branzino, inside and out. Let it marinate for at least 30 minutes.

  3. 3

    Prepare the Salad

While the fish is marinating, thinly slice the endive, fennel bulb, and red onion. Peel and segment the oranges, removing any seeds.

  4. 4

    Combine Salad Ingredients

In a large bowl, combine the sliced endive, fennel, red onion, and orange segments. Drizzle with olive oil, red wine vinegar, and season with salt and black pepper. Toss gently to combine.

  5. 5

    Grill the Branzino

Preheat a grill over medium-high heat. Place the branzino on the grill and cook for about 6-8 minutes per side, or until the flesh is opaque and flakes easily with a fork.

  6. 6

    Serve

Serve the grilled branzino alongside the endive, orange, and fennel salad. Enjoy!
