Cooking Pasta

Boil the Pasta
In a large pot, bring salted water to a boil. Add the spaghetti and cook according to package instructions until al dente, usually about 8-10 minutes.

Reserve Pasta Water
Before draining, reserve about 1 cup of pasta cooking water. Then, drain the spaghetti and set aside.
Preparing the Sauce

Cook the Pancetta
In a large skillet over medium heat, add the pancetta and cook until crispy, about 5-7 minutes. Remove from heat and set aside, leaving the fat in the pan.

Mix Eggs and Cheese
In a mixing bowl, whisk together the eggs, grated Parmesan cheese, and black pepper until well combined.

Combine Pasta with Pancetta
Add the drained spaghetti to the skillet with the pancetta. Toss to combine and coat the pasta in the rendered fat.
