Method

Appetizer: Mediterranean Hummus

    Prepare the Hummus

    In a food processor, combine the chickpeas, tahini, minced garlic, lemon juice, olive oil, ground cumin, and salt.

    Blend

    Blend the mixture until smooth. If the hummus is too thick, add a little water to reach desired consistency.

    Serve

    Transfer the hummus to a serving bowl, drizzle with olive oil, and sprinkle with paprika before serving.

Main Course: Grilled Salmon with Mediterranean Salsa

    Prepare the Marinade

    In a bowl, combine olive oil, minced garlic, salt, and black pepper. Add the salmon fillets and coat them well. Let marinate for 15 minutes.

    Make the Salsa

    In another bowl, mix together cherry tomatoes, cucumber, red onion, feta cheese, parsley, and lemon juice. Season with salt and pepper to taste.

    Grill the Salmon

    Preheat the grill to medium-high heat. Grill the salmon fillets for about 5-6 minutes on each side or until cooked through.

    Serve

    Plate the grilled salmon and top it with the Mediterranean salsa. Drizzle with extra olive oil if desired.

Dessert: Tiramisu

    Make the Filling

    In a bowl, whisk together mascarpone cheese, heavy cream, and sugar until smooth and creamy.

    Prepare the Coffee

    Dip ladyfingers briefly in the cooled coffee and layer them in a dish.

    Layer the Tiramisu

    Spread half of the mascarpone mixture over the ladyfingers. Repeat with another layer of dipped ladyfingers and remaining mascarpone mixture.

    Chill and Serve

    Cover and refrigerate for at least 4 hours. Before serving, dust with cocoa powder.
