For the Appetizer: Bruschetta

For the Main Course: Lemon Herb Grilled Chicken

For the Dessert: Chocolate Mousse

Method

For the Appetizer: Bruschetta

  1. 1

    Prepare the Tomatoes

Dice the ripe tomatoes and place them in a bowl.

  2. 2

    Add Seasoning

Chop the fresh basil leaves and add them to the tomatoes. Mince the garlic cloves and add them as well. Drizzle with olive oil and balsamic vinegar, then season with salt and black pepper to taste.

  3. 3

    Toast the Baguette

Slice the baguette into 1-inch thick slices. Toast them in a preheated oven at 400°F (200°C) for about 5-7 minutes or until golden brown.

  4. 4

    Assemble Bruschetta

Top each toasted baguette slice with the tomato mixture and serve immediately.

For the Main Course: Lemon Herb Grilled Chicken

  1. 5

    Prepare Marinade

In a bowl, combine lemon juice, chopped rosemary, thyme, garlic powder, salt, black pepper, and olive oil.

  2. 6

    Marinate Chicken

Place the chicken breasts in a zip-lock bag or a shallow dish and pour the marinade over them. Seal the bag or cover the dish and refrigerate for at least 30 minutes.

  3. 7

    Preheat Grill

Preheat your grill to medium-high heat.

  4. 8

    Grill Chicken

Remove chicken from the marinade and grill for about 6-7 minutes on each side, or until fully cooked and internal temperature reaches 165°F (75°C).

  5. 9

    Rest and Serve

Let the chicken rest for a few minutes before slicing and serving.

For the Dessert: Chocolate Mousse

  1. 10

    Melt the Chocolate

In a heatproof bowl, melt the dark chocolate over a pot of simmering water, stirring until smooth. Allow to cool slightly.

  2. 11

    Prepare Egg Mixture

Separate the egg yolks from the whites. In a mixing bowl, whisk egg yolks and sugar until pale and creamy.

  3. 12

    Combine Mixtures

Stir the melted chocolate into the egg yolk mixture, then add vanilla extract.

  4. 13

    Whip the Cream

In a separate bowl, whip the heavy cream until soft peaks form.

  5. 14

    Fold in the Cream

Gently fold the whipped cream into the chocolate mixture until fully combined.

  6. 15

    Chill and Serve

Spoon the mousse into serving dishes and refrigerate for at least 2 hours before serving.
