Wine Making Process
1. Harvesting
Harvest the Chardonnay grapes at their peak ripeness. This is typically done in late summer to early fall.
2. Crushing and Pressing
Once harvested, crush the grapes to release the juice. Use a wine press to extract as much juice as possible.
3. Fermentation
In a sanitized fermentation vessel, combine the grape juice with the yeast. Allow the mixture to ferment at a controlled temperature of around 18-22°C (65-72°F) for about 2-4 weeks.
4. Adding Sulfites
After fermentation, add sulfites to stabilize the wine and prevent unwanted bacterial growth. This should be done in a well-ventilated area.
5. Clarification
Allow the wine to clarify by letting it sit undisturbed for a few weeks. This will help sediments settle at the bottom of the fermentation vessel.
6. Bottling
Once the wine is clarified, carefully siphon it into sanitized bottles, leaving some space at the top. Seal the bottles with corks and label them.
7. Aging
Store the bottled wine in a cool, dark place for at least 6 months to a year to enhance its flavors before consumption.
