Method
Cooking the Pasta
Boil the Pasta
In a large pot, bring salted water to a boil. Once boiling, add the pasta and cook according to package instructions until al dente. This usually takes about 8-10 minutes.
Drain and Set Aside
Once the pasta is cooked, reserve about 1 cup of the pasta water, then drain the pasta and set it aside.
Preparing the Sauce
Sauté Garlic
In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute, or until fragrant but not browned.
Add Cherry Tomatoes
Add the halved cherry tomatoes to the skillet and cook for about 3-4 minutes, stirring occasionally until they soften and start to burst.
Add Spinach
Add the fresh spinach to the skillet and stir until wilted, which should take about 2 minutes.
Combine Pasta and Sauce
Add the cooked pasta to the skillet along with a splash of the reserved pasta water to help combine. Toss everything together to coat the pasta with the sauce.
Season
Season with salt and freshly cracked black pepper to taste. If you prefer a bit of heat, add red pepper flakes according to your taste.
Finish with Cheese
Sprinkle the grated Parmesan cheese over the pasta and toss again until evenly distributed.
Serving
Plate and Garnish
Serve the pasta warm, garnished with fresh basil if desired. Enjoy your Dona Paula Main Street Classic!
