1. Activate Yeast

In a small bowl, combine warm water, sugar, and active dry yeast. Let it sit for about 5-10 minutes, or until it becomes frothy.

2. Mix Ingredients

In a large mixing bowl, combine all-purpose flour and salt. Make a well in the center and add the activated yeast mixture and olive oil.

3. Knead the Dough

Mix until a dough forms, then transfer to a floured surface. Knead the dough for about 8-10 minutes until it is smooth and elastic.

4. First Rise

Place the dough in a lightly oiled bowl, cover with a clean cloth, and let it rise in a warm place for about 1 hour, or until doubled in size.

5. Prepare the Spinach

In a pan, heat 1 tablespoon of olive oil over medium heat. Add minced garlic and sauté until fragrant. Add fresh spinach and cook until wilted. Season with salt and pepper to taste.

While the spinach cools, slice the fresh mozzarella cheese into rounds and set aside.

7. Preheat Oven

Preheat your oven to its highest setting, usually around 475°F (245°C). If you have a pizza stone, place it in the oven to heat.

8. Shape the Dough

Once the dough has risen, punch it down and transfer it to a floured surface. Divide it into two equal portions for two pizzas. Shape each portion into a round pizza base.

9. Add Sauce and Toppings

10. Bake the Pizza
