    Prepare the Ingredients

    Rinse the lentils under cold water, dice the carrots, chop the onion, and dice the tomatoes. Mince the garlic and set everything aside.

    Sauté the Vegetables

    In a large pot, heat the olive oil over medium heat. Add the chopped onions and sauté for about 3-4 minutes until they become translucent.

Cooking

    Add Remaining Ingredients

    Stir in the minced garlic, diced carrots, and diced tomatoes. Cook for another 2-3 minutes.

    Combine with Lentils and Broth

    Add the rinsed lentils, vegetable broth, bay leaves, thyme, salt, and black pepper to the pot. Bring to a boil.

    Simmer

    Once boiling, reduce the heat to low, cover the pot, and let it simmer for about 25-30 minutes, or until the lentils are tender.

Finishing Touches

    Remove Bay Leaves

    After cooking, remove the bay leaves from the pot.

    Serve

    Ladle the Dona Paula into bowls, garnish with chopped parsley, and serve with lemon wedges on the side.
