Bring a large pot of salted water to a boil. Add the farfalle pasta and cook according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the pasta.

Cook the Pasta

In a large skillet, cook the pancetta or guanciale over medium heat until crispy. Remove from heat and let cool slightly.

Prepare the Sauce

In a bowl, whisk together the eggs and grated Parmesan cheese until well combined. Add black pepper and salt to taste.

Mix the Egg and Cheese

Quickly add the hot pasta to the skillet with the pancetta, tossing to combine. Remove from heat and pour the egg and cheese mixture over the pasta, tossing quickly to coat. If the sauce is too thick, add reserved pasta water a little at a time until desired consistency is reached.

Combine Pasta and Sauce

Garnish with fresh parsley if desired and serve immediately.
