Preparation and Cooking
1. Prepare the Breading
In a large bowl, mix together the flour, cornstarch, salt, black pepper, and garlic powder. Set aside.
2. Soak the Calamari
In another bowl, soak the calamari rings in buttermilk for about 30 minutes to tenderize.
3. Heat the Oil
In a large pot or deep fryer, heat the vegetable oil to 350°F (175°C).
4. Coat the Calamari
Remove the calamari from the buttermilk and let the excess drip off. Dredge the calamari rings in the flour mixture until well coated.
5. Fry the Calamari
Carefully place the coated calamari rings into the hot oil, working in batches to avoid overcrowding. Fry for 2-3 minutes or until golden brown.
6. Drain and Serve
Using a slotted spoon, remove the fried calamari and drain on paper towels. Serve immediately with lemon wedges and garnish with chopped parsley.
