Preparing the Fries

Cut and Fry the Potatoes
Peel and cut the russet potatoes into thin fries. Rinse them in cold water to remove excess starch, then pat dry. Heat olive oil in a deep fryer or large pot to 350°F (175°C) and fry the potatoes until golden brown, about 5-7 minutes. Remove and drain on paper towels, then season with salt.

Prepare the Sauce
In a bowl, mix together sour cream, prepared horseradish, lemon juice, salt, and black pepper to taste. Adjust seasoning as desired.
Assembling the Dish

Serve
On a plate, serve a generous portion of fries, top with sliced steak, and finish with caramelized onions. Drizzle the horseradish cream sauce over the top before serving.
