Heat 3 gallons of filtered water to 165°F (74°C) and add the grains. Maintain a temperature of 150°F (65°C) for 60 minutes.

Mashing

After mashing, sparge with 3 gallons of water at 170°F (77°C) to rinse the grains.

Sparging

Boil the wort and add Citra hops at the start of the boil, Amarillo hops at 15 minutes left, and Simcoe hops at 5 minutes left.

Boiling

Cool the wort quickly using a wort chiller to reach fermentation temperature.

Cooling

Transfer the cooled wort to a fermenter, add the American Ale Yeast, and let it ferment for 1-2 weeks.

Fermentation

After primary fermentation, add fiddlehead ferns for a week to impart their unique flavor.

Dry Hopping

Bottle the beer with priming sugar and let it carbonate for 2 weeks.
