Heat 6 liters of filtered water to 66°C (150°F). Add Pilsner malt, Munich malt, and Carapils malt to the water. Maintain the temperature for 60 minutes.

After mashing, sparge the grains with additional hot water to collect the wort in the brew kettle.

Sparging

Bring the wort to a boil, then add Hallertau hops. Boil for 60 minutes, adding Saaz hops in the last 15 minutes.

Boiling

Cool the wort quickly using a wort chiller or an ice bath until it reaches about 20°C (68°F).

Cooling

Transfer the cooled wort to a sanitized fermentation vessel. Pitch the German lager yeast and seal with an airlock. Ferment at 10-12°C (50-54°F) for 2 weeks.

Fermentation

After fermentation, bottle the beer with a small amount of priming sugar for carbonation. Condition in a cool place for 1-2 weeks.
