Mix the Base
In a cocktail shaker, combine St. Germain liqueur and fresh lemon juice. Add ice cubes and shake well until chilled.

Pour and Top
Strain the mixture into a tall glass filled with ice. Pour ginger beer over the top and then gently add Prosecco.

Garnish with a lemon slice and mint leaves. Serve immediately.
