    Make the Dough

    In a large mixing bowl, combine warm water, sugar, and active dry yeast. Let it sit for about 5 minutes until it's frothy. Add the all-purpose flour and salt. Mix until a dough forms.

    Knead the Dough

    Turn the dough out onto a floured surface and knead for about 5-7 minutes until it becomes smooth and elastic. Place it in a greased bowl, cover with a towel, and let it rise in a warm place for about 1 hour, or until doubled in size.

    Shape the Pretzel Bites

    Preheat your oven to 450°F (230°C). Once the dough has risen, punch it down and roll it into a long rope, about 1 inch thick. Cut the rope into 1-inch pieces to form bite-sized pretzel pieces.

    Prepare the Baking Soda Bath

    In a large pot, bring 10 cups of water to a boil. Add the baking soda carefully (it will bubble up). Boil the pretzel bites in batches for about 30 seconds, then remove them with a slotted spoon and place them on a baking sheet lined with parchment paper.

    Sprinkle the coarse sea salt over the pretzel bites. Bake in the preheated oven for about 12-15 minutes, or until they are golden brown.
