Ingredients for ECCO Domani Pinot Grigio

Method

Winemaking Process

  1. 1

    Harvesting

Harvest the Pinot Grigio grapes at peak ripeness, typically in late summer to early fall.

  2. 2

    Crushing and Pressing

Crush the grapes to release the juice and then press them to separate the juice from the skins.

  3. 3

    Fermentation

Transfer the grape juice to a fermentation vessel. Add yeast to the juice and allow it to ferment at controlled temperatures (12-18°C) for about 2-3 weeks.

  4. 4

    Clarification

After fermentation, let the wine settle to clarify. You can use fining agents if needed.

  5. 5

    Aging

Age the wine in stainless steel tanks for a few months to develop its flavors. You may choose to add sulfites for preservation.

  6. 6

    Bottling

Once aged, filter and bottle the wine. Seal with corks and label appropriately.

  7. 7

    Serving

Chill the wine before serving. It pairs well with seafood, salads, and light pasta dishes.
