Jam - Make and jar

Rinse berries and remove stems. In a wide heavy-bottomed pot, combine 2 cups berries, 0.5 cups granulated sugar, and 1 tablespoon lemon juice. Cook over medium heat, stirring occasionally, until the mixture thickens to a jam-like consistency and passes the drop test. Remove from heat, skim foam, and ladle into a clean, sterilized jar. Let cool to room temperature, then refrigerate. Yield about 1/2 to 2/3 cup jam for serving with crostini.

Honeycomb - Prepare the candy

Line a parchment paper on a tray. In a heavy saucepan, combine 1 cup white sugar, 0.5 cup light corn syrup, and 0.25 cup water. Bring to a boil and cook without stirring until the syrup reaches hard crack stage (hard enough to snap). Remove from heat and quickly whisk in 1 teaspoon baking soda; the mixture will foam vigorously. Pour onto the prepared tray and allow to cool completely. Once set, break into shards.

Crostini - Bake bread

Preheat oven to 375°F (190°C). Slice baguette into 1/4-inch rounds or diagonally into 1/2-inch slices. Arrange on a baking sheet, brush both sides with olive oil, and season with 1/4 teaspoon sea salt. Optional: rub with a lightly crushed garlic clove for fragrance. Bake 8-12 minutes until golden and crisp. Cool on a rack.

Assemble and plate

Arrange crostini on a platter. Spoon a small dab of jam on each crostini and top with a shard of honeycomb. Garnish with a light drizzle of any extra jam if desired. Serve at room temperature.
