Warm & Combine

In a small saucepan over low heat, warm 1.5 cups Campari until it is just warm to the touch (do not boil). Remove from heat and stir in 1.5 cups whole milk until evenly combined.

Add Boursin

Stir in 1/2 cup crumbled Boursin cheese into the warm Campari-milk mixture. The acidity/proteins in the cheese and milk will begin to curdle the mixture. Let sit, undisturbed, for 20–30 minutes to allow curds to form and the whey/colored liquid to separate.

First Strain

Line a fine sieve with cheesecloth or a coffee filter and place it over a clean bowl or container. Pour the curdled mixture through the cloth to separate the solids (curds) from the colored liquid. Allow it to drain by gravity for 30–45 minutes; do not press the solids—let them drain slowly to keep the clarity.

Clarify

Once most liquid has drained, transfer the filtered liquid back into the sieve lined again with a fresh filter and let drip for an additional 30 minutes to obtain a bright, clarified Campari liquid infused gently with Boursin flavor. The resulting liquid should be clear to translucent and have a savory, herbal note.

Chill & Measure

Refrigerate the clarified liquid until cold. Measure out 3 tablespoons (approx. 45 ml) of the clarified Campari-Boursin for each cocktail. Discard solids (or reserve for another use).

Combine

In a cocktail shaker, add 3 tbs (approx. 45 ml) clarified Campari-Boursin, 1.5 oz gin, 0.75 oz Lillet Blanc, 0.25 oz fresh lemon juice, and 0.25 oz simple syrup.

Shake

Add ice to the shaker (about 6 standard cubes). Shake vigorously for 12–15 seconds until the shaker is well-chilled and slightly frosted.

Double Strain & Serve

Double-strain the cocktail into a chilled coupe or Nick & Nora glass to remove any tiny ice chips. The clarified Campari will add a silky, slightly savory red tint.

Garnish

Express a lemon twist over the drink and discard or rim the glass with it, then float a small sprig of microgreens on the surface as a visual and herbal accent.

Serve

Serve immediately. This cocktail yields a balanced interplay of bitter clarified Campari with herbaceous Boursin notes, rounded by gin and Lillet.
