Preheat

Position a rack in the middle of the oven and preheat to 425°F (220°C). Line a baking sheet with parchment.

Prepare cauliflower

Remove leaves, cut the cauliflower into florets of even size, rinse briefly if needed, and dry well.

Season and coat

In a large bowl, toss the cauliflower florets with olive oil, minced garlic, sliced Thai chilies, verjus, salt, and pepper until evenly coated.

Roast

Spread the florets in a single layer on the prepared baking sheet. Roast for 20–25 minutes, turning halfway through, until edges are browned and the centers are tender.

Finish and serve

Remove from oven. Drizzle with additional verjus if desired. Taste and adjust salt. Garnish with fresh herbs if desired and serve warm.
