Drain the olives if packed in brine, then rinse briefly and pat dry thoroughly.

In a mixing bowl, whisk together olive oil, white wine vinegar, minced garlic, lemon zest, orange zest, crushed red pepper flakes, dried oregano, fresh thyme leaves, bay leaf, and salt until the marinade is well combined.

Add the olives to the marinade and toss gently to coat all olives evenly with the aromatics.

Let the olives marinate at room temperature for 60–90 minutes, tossing once halfway through to redistribute flavors.

Remove the bay leaf. Transfer the olives and any excess marinade to a serving dish and serve at room temperature as PETITS PLATES.
