Prepare the crust

Preheat the oven to 350°F (175°C). In a mixing bowl, combine the graham cracker crumbs, melted unsalted butter, and salt. Mix until well combined and press into the bottom of a 9-inch springform pan. Bake for 10 minutes, then remove from the oven and set aside to cool.

Make the filling

In a large mixing bowl, beat the cream cheese until smooth. Gradually add the granulated sugar and continue to beat until creamy. Mix in the sour cream, vanilla extract, and salt. Add the eggs one at a time, mixing on low speed until just combined.

Combine and bake

Pour the cheesecake filling over the cooled crust in the springform pan. Bake in the preheated oven for 50 to 60 minutes, or until the center is set but slightly jiggly. Turn off the oven and leave the cheesecake inside with the door slightly open for 1 hour.

Cool and refrigerate

Remove the cheesecake from the oven and let it cool at room temperature for another hour. Then, refrigerate for at least 4 hours, preferably overnight, before serving.
