Main Ingredients

Method

Preparation

  1. 1

    Preheat the Oven

Preheat your oven to 200°C (400°F).

  2. 2

    Prepare the Ingredients

Wash the cherry tomatoes and drain them. Peel the garlic cloves and leave them whole. Chop the fresh basil roughly.

Baking

  1. 3

    Assemble the Baking Dish

In a baking dish, place the block of feta cheese in the center surrounded by the cherry tomatoes. Drizzle with olive oil and sprinkle the whole garlic cloves, salt, black pepper, and red pepper flakes on top.

  2. 4

    Bake

Bake in the preheated oven for 25-30 minutes or until the feta is soft and the tomatoes are blistered.

Cooking the Pasta

  1. 5

    Cook the Pasta

While the feta and tomatoes are baking, cook the pasta in a large pot of boiling salted water according to package instructions until al dente. Reserve 1 cup of pasta water and then drain the rest.

Combining

  1. 6

    Mix Everything Together

Once the feta and tomatoes are done baking, remove from the oven and use a fork to mash the feta and mix it with the tomatoes and juices. Add the cooked pasta and mix well, adding reserved pasta water a little at a time until you reach your desired sauce consistency.

  2. 7

    Add Fresh Basil

Stir in the chopped fresh basil and adjust seasoning with more salt, pepper, or red pepper flakes if desired.

Serving

  1. 8

    Serve

Serve the baked feta pasta warm, garnished with extra basil if desired.
