1. Prepare the Marinade

In a blender, combine the garlic cloves, dried red chili peppers, cumin, oregano, salt, black pepper, olive oil, and water. Blend until smooth to create a marinade.

2. Marinate the Pork

Cut the pork shoulder into chunks and place them in a large bowl. Pour the marinade over the pork, ensuring it is well coated. Cover and let it marinate in the refrigerator for at least 2 hours, preferably overnight.

3. Cook the Pork

Preheat your oven to 300°F (150°C). Place the marinated pork in a baking dish and cover with foil. Bake for 3 hours or until the pork is tender and can be easily shredded with a fork.

4. Shred the Pork

Once cooked, remove the pork from the oven and let it cool slightly. Use two forks to shred the pork into bite-sized pieces.

5. Prepare the Tortillas

Warm the flour tortillas in a dry skillet over medium heat for about 30 seconds on each side, just until pliable.

6. Assemble the Burritos

On each tortilla, place a generous portion of shredded carne adovada, followed by a handful of shredded cheddar cheese, lettuce, diced tomatoes, a dollop of sour cream, and slices of avocado.

7. Fold the Burritos

Fold the sides of the tortilla over the filling, and then roll it up tightly from the bottom to the top to enclose the filling.

8. Serve

Serve the burritos warm with additional sour cream or salsa on the side.
